The BEST Fluffy Vegan Pancakes: Easy & Delicious

At one point in time the pancake was my oldest child’s favorite food item. Breakfast, lunch, snack, dinner… the time of day was not a deciding factor on when my child would ask for pancakes and she asked for them quite often. She asked for them so much that I would make them in large batches and freeze them to have on hand whenever the craving came calling.

When we went vegan, it was the first thing I learned to make from scratch since we could no longer reap the benefits of “just add water” pancake mixes, and I am honestly not interested in paying the price of the plant-based mixes. Thankfully, this vegan pancake recipe is incredibly easy and doesn’t take much time to prepare, but even with that I still like to prep the dry mix ahead of time to take the stress out of mornings and to help me out when I really don’t feel like cooking, but I have to.

What you’ll need for these vegan pancakes…

For this recipe you will need:

  • a mixing bowl
  • something for mixing (fork, whisk, or spoon)
  • measuring cups
  • skillet
  • spatula

Foods to gather for these vegan pancakes

You’ll need the following list of ingredients for these fluffy homestyle pancakes. You can also use the prepped pancake mix listed on my post of vegan dry mixes along with the listed wet ingredients.

For the pancakes…

  1. Plant-based vanilla buttermilk
    • You can easily make your own by combining 1 cup of plant-based milk of your choice (I like to use oat milk), 1 tablespoon of apple cider vinegar, and up to 1 tb of vanilla. Let it sit for at least 5 mins before using. Can be prepped and stored in the fridge for up to a week.
  2. All-purpose flour
    • This recipe works well with gluten-free flour. You may need to add 1/2 cup more milk to gain a smoother batter.
  3. Sugar
  4. Baking powder
  5. Salt
  6. Butter or oil for your pan

Steps to follow for these vegan pancakes

Step 1: Preheat your skillet on med-low heat. Combine all dry ingredients in a mixing bowl. Flour, baking powder, sugar, and salt.

If you are using a dry mix, give the jar a shake before dumping the contents out into a bowl, then go to step 2.

Step 2: Once combined, mix in the vanilla buttermilk. Milk until well combined, the batter should be smooth.

You can add mix-ins at this step if you would like to. I have used mix-ins like cinnamon, blueberries, chocolate chips, and sprinkles in the past.

Step 3: Once your pan is hot, put about half a tablespoon of butter into your pan before spooning pancake mix into the pan. You can make the pancakes as big or as small as you’d like.

Step 4: Once the pancakes have bubbled up, give them a flip. Wait about 2-3 minutes before removing the pancake from the skillet.

Enjoy them warm; served with syrup, fruit, and/or a protein of your choice.

Ingredients
  

  • 1 cuo plant-based milk
  • 1 tbsp Apple cider vinegar
  • 1/2 tbsp Vanilla
  • 1 cup Unbleached all purpose flour
  • 1 tbsp Baking powder
  • 3 tbsp Organic cane sugar
  • 1 pinch Salt
  • 1/2 cup Mix-in of choice (blueberries, choc. chips, etc.) optional
  • 1/2 cup Plant-based butter or neutral oil

Equipment

  • 1 Mixing bowl
  • 1 Mixing item fork or whisk
  • 1 Measuring cup set
  • 1 Skillet
  • 1 Spatula

Method
 

  1. Heat skillet to med-lo heat.
  2. Combine plant-based milk, apple cider vinegar, and vanilla to make vanilla buttermilk. Let sit for at least 5 minutes.
  3. Combine flour, baking powder, sugar, and salt in a bowl.
  4. Mix in buttermilk until well combined. The batter will be smooth.
  5. Add mix-ins of choice or keep the batter plain.
  6. Add about 1/2 tbs of butter or oil into heated pan before spooning pancake mix into pan. Pancake sizes may vary, aim for 1/4 cup mix per pancake.
  7. Wait 2-3 minutes or until bubbles have formed on mix before flipping pancake. Wait another 2-3 minutes before removing pancake from skillet.
  8. Enjoy warm.

Notes

Pancakes are best served with warm maple syrup and a side of fruit. Other fun toppings include nut butters, granolas, and fruit. Allow yourself to enjoy mixing and matching flavors.
