Method
- Heat skillet to med-lo heat.
- Combine plant-based milk, apple cider vinegar, and vanilla to make vanilla buttermilk. Let sit for at least 5 minutes.
- Combine flour, baking powder, sugar, and salt in a bowl.
- Mix in buttermilk until well combined. The batter will be smooth.
- Add mix-ins of choice or keep the batter plain.
- Add about 1/2 tbs of butter or oil into heated pan before spooning pancake mix into pan. Pancake sizes may vary, aim for 1/4 cup mix per pancake.
- Wait 2-3 minutes or until bubbles have formed on mix before flipping pancake. Wait another 2-3 minutes before removing pancake from skillet.
- Enjoy warm.
Notes
Pancakes are best served with warm maple syrup and a side of fruit. Other fun toppings include nut butters, granolas, and fruit. Allow yourself to enjoy mixing and matching flavors.
