The BEST Fluffy Vegan Pancakes: Easy & Delicious

At one point in time the pancake was my oldest child’s favorite food item. Breakfast, lunch, snack, dinner… the time of day was not a deciding factor on when my child would ask for pancakes and she asked for them quite often. She asked for them so much that I would make them in large batches and freeze them to have on hand whenever the craving came calling.
When we went vegan, it was the first thing I learned to make from scratch since we could no longer reap the benefits of “just add water” pancake mixes, and I am honestly not interested in paying the price of the plant-based mixes.

  8. Enjoy warm.

Notes

Pancakes are best served with warm maple syrup and a side of fruit. Other fun toppings include nut butters, granolas, and fruit. Allow yourself to enjoy mixing and matching flavors.
