Best Quick & Easy Vegan Blueberry Drop Biscuits

In my vegan drop biscuit recipe, I mentioned making biscuits multiple times a week due to how easy, yet delicious they turn out. After a few weeks of plain biscuits multiple times a week, I decided to play around with different mix-ins.

Before going vegan, I LOVED Bojangles bo-berry biscuits, so when the thought of playing around with biscuit flavors came up, blueberry biscuits were a must. They turned out much tastier than the Bojangles biscuits, and were eaten much faster than the plain biscuits I normally make.

What you’ll need for these vegan blueberry drop biscuits

For this recipe you will need:

  • a mixing bowl
  • a spoon for mixing
  • a fork
  • measuring cups
  • a baking sheet
  • parchment paper

If you want to make a glaze for your biscuits, you will need a small bowl and a spoon for that.

Ingredients for these vegan blueberry drop biscuits

You’ll need the following list of ingredients for these vegan blueberry drop biscuits. You can also use the prepped biscuit mix listed on my post of vegan dry mixes, all you will need is sugar, blueberries, and glaze ingredients.

For the biscuits…

  1. Plant-based buttermilk
    • You can easily make your own by combining 1 cup of plant-based milk of your choice and 1 tablespoon of apple cider vinegar. Let it sit for at least 5 mins before using.
  2. All-purpose flour
  3. Baking powder
  4. Baking soda
  5. Organic Cane Sugar
  6. Salt
  7. Coldbutter
    • Use any firm plant-based butter of your choice. I like Country Crock plant butter with olive oil.
  8. Frozen Wild Blueberries

For the glaze…

  1. Melted plant-based butter
    • You can use any plant-based butter. I like the Country Crock plant butter with olive oil.
  2. Organic powdered sugar
  3. Vanilla
  4. Plant-based milk

Steps to follow for these vegan blueberry drop biscuits

Step 1: Preheat your oven. Combine all dry ingredients in a mixing bowl. Flour, baking powder, baking soda, sugar, and salt.

If you are using a dry mix, give the jar a shake before dumping the contents out into a bowl, then go to step 2.

Step 2: Once combined, add in your butter. I like to slice mine into tablespoon sized portions before adding for easier mixing. Use a fork to combine the dry mix and butter into a fine powdery, mixture.

Step 3: Mix in the plant-based butter mix. The batter will be on the thicker side, but it should not appear dry.

Step 4: Mix in blueberries. You will only need to stir it a few times to mix them in.

Step 5: Now it is time to drop the biscuit dough onto the pan! You can make 6 – 8 biscuits depending on the size of your biscuits. Allow the biscuits to bake for 10-15 mins.

Step 6: While the biscuits are baking, combine the glaze ingredients in a small bowl. Once the biscuits are removed from the oven, spread the glaze over the biscuits. Enjoy them warm!

Vegan Blueberry Drop Biscuits

Ingredients
  

  • 1 cup Plant-based milk
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Vanilla
  • 2 cups Unbleached all purpose flour
  • 1 tbsp Baking powder
  • 1/2 tsp Baking soda
  • 3 tbsp Organic cane sugar
  • 3/4 tsp salt
  • 6 tbsp Cold plant-based butter
  • 1/2 cup Frozen wild blueberries
Optional glaze
  • 1 1/2 tbsp Melted plant-based butter
  • 1 tbsp Plant-based milk
  • 1/2 cup Organic powdered sugar
  • 1 tsp Vanilla

Equipment

  • 1 Mixing bowl
  • 1 Fork
  • 1 Measuring cup
  • 1 Measuring cup set
  • 1 Baking sheet
  • 1 Sheet of parchment paper

Method
 

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Combine plant-based milk, apple cider vinegar, and vanilla to make a buttermilk. Let sit for at least 5 mins.
  3. Combine dry ingredients in a mixing bowls.
  4. Cut butter into 1 tbs portions and add them to the bowl. Use a fork or similar utensil to combine the butter and flour into a fine powder.
  5. Mix in the plant-based buttermilk.
  6. Mix in blueberries. Do not overmix.
  7. Drop scoops of biscuits onto parchment paper lined baking sheet. Recipe makes 6-8 biscuits depending on size of biscuits.
  8. Bake in oven for 10 – 15 mins, or until golden brown on the bottom.
  9. Once removed from oven, pour a spoonful of glaze over each biscuit.
  10. Enjoy warm.
